Zucchini, Bell Pepper, and Bean Casserole with Minced Meat
- 1 zucchini
- 1 bell pepper
- 1 lb minced meat (beef, turkey, or chicken)
- 1 can of beans (black, kidney, or pinto)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup bread crumbs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
1. Preheat your oven to 375°F (190°C).
2. Begin by preparing the zucchini and bell pepper. Cut the zucchini into thin slices and dice the bell pepper into small pieces.
3. In a large skillet, heat the olive oil over medium-high heat. Add the minced meat and cook until it is no longer pink, breaking it up into small pieces as it cooks. Drain any excess fat.
4. Add the zucchini and bell pepper to the skillet with the minced meat. Cook for 5-7 minutes, until the vegetables are slightly softened.
5. Drain and rinse the beans, then add them to the skillet. Stir everything together and season with garlic powder, onion powder, salt, and pepper.
6. Transfer the mixture to a casserole dish and spread it evenly. Sprinkle the shredded cheese on top, followed by the bread crumbs.
7. Bake the casserole for 20-25 minutes, until the cheese is melted and the bread crumbs are golden brown.
