Roasted Beet Salad
Ingredients:
- 4 medium sized beets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
- 4 cups mixed greens
Instructions:1. Preheat your oven to 400 degrees Fahrenheit.2. Wash and peel the beets. Cut off the stems and roots, and slice the beets into 1/4 inch thick rounds.3. Place the sliced beets on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.4. Roast the beets in the oven for 25-30 minutes, or until they are tender.5. While the beets are roasting, prepare the dressing. In a small bowl, whisk together 1/4 cup balsamic vinegar, 1/4 cup extra virgin olive oil, 1 teaspoon of Dijon mustard, minced garlic, and salt and pepper to taste.6. Once the beets are done roasting, let them cool for a few minutes.7. In a large bowl, toss 4 cups of mixed greens with the prepared dressing.8. Add the roasted beets to the bowl and toss gently to combine.9. Sprinkle chopped walnuts and crumbled feta cheese on top of the salad.10. Serve and enjoy your delicious and colorful roasted beet salad!
