Creamy Coconut Lentil Stew
Ingredients:
- 1 cup lentils
- 2 cups water
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 carrots, peeled and diced
- 1 can (14 oz) coconut milk
- 1 cup cherry tomatoes, halved
Instructions:
1. In a large pot, combine lentils and water. Bring to a boil, then reduce heat to low and let simmer for 20 minutes.
2. In a separate pan, heat olive oil over medium heat. Add diced onion and minced garlic, and cook until softened.
3. Add cumin, coriander, paprika, salt, and black pepper to the pan with onions and garlic. Stir to combine and let cook for 1-2 minutes.
4. Add the onion and spice mixture to the pot with the lentils. Stir to combine.
5. Add diced carrots to the pot and let simmer for an additional 15 minutes, until carrots and lentils are tender.
6. Pour in the can of coconut milk and let simmer for 5 minutes.
7. Add halved cherry tomatoes to the pot and let cook for another 5 minutes.
8. Serve hot and enjoy your creamy coconut lentil stew!
